Global kitchen knives are the original Japanese knives, the most demanded by chefs all over the world for their quality, lightness, ergonomics, design and assortment. The GS series features a sheared blade made of special molybdenum-vanadium steel hardened and tempered to 56-58 degrees Rockwell. The handles are hollow stainless steel, filled with sand for perfect balance. The blade is hand ground and has excellent edge retention against wear. The anatomical shape of the handle and the lightness of the knife (approx. 30 % less than other full-handled knives) allow long use and reduce fatigue for the user.
A knife of great utility in the kitchen, ideal for filleting or filleting small quantities of meat or fish. Flexible.
