Global Ham/Salmon Knife G-69
Global kitchen knives are the original Japanese knives, the most sought after by chefs all over the world for their quality, lightness, ergonomics, design and assortment. The G series features a sheared blade made of special molybdenum-vanadium steel hardened and tempered to 56-58 degrees Rockwell. The handles are hollow stainless steel, filled with sand for perfect balance. The blade is hand ground and has excellent edge retention against wear. The anatomical shape of the handle and the lightness of the knife (about 30 % less than other full-handled knives) allow for long use and reduce user fatigue.
This model is ideal for slicing salmon and ham. The blade is of the flexible type.
