The Gyuto 24 cm is a chef's knife slightly larger than the traditional and 20-21 cm. It is used for cutting medium to large foods such as meat and fish when a large knife is required.
It can however be used for fruit and vegetables and finds its perfect combination with a Nakiri or Santoku that allow precision cuts on smaller foods.
Modern Molybdenum is the basic line of Mcusta Zanmai kitchen knives, however, made with construction techniques and high quality materials. The blade is Molybdenum Vanadium 8A steel with Hamaguri sharpening which consists of a slightly asymmetrical cut that has a lot of penetration with minimal force.
The handle is in Black Pakka Wood worked piece by piece by Japanese craftsmen enriched by a polished stainless steel plate engraved with the company logo which has both an aesthetic and functional function: it can be used for example as a garlic press.
